I think I'm finally getting over this cold. It has been the longest I've had a cold in many many years. I decided I'm tackling my desk today. It is piled with about four inches deep of the kids school papers and the mail that came while we were out of town and since then. I've glanced at it all, but it needs to actually be sorted and filed and tossed and all of that fun stuff. I've become so dependent on paying bills online and my bank's website is giving me a headache right now so just getting everything back to my smooth process will be nice and I'll feel like I've accomplished something if I can get all of that taken care of today.
Yesterday I tried something new and cooked one of our favorite chicken meals in the crockpot. It was so much easier because I just dumped the frozen chicken in and let it cook all day long. I don't know why I don't pull it out and use it more often.
I think I might try to fix something picnic style for dinner tonight. It's such a nice day outside and I know those are going to be gone soon. We rarely have picnics, but it sounds like a fun thing to just mix things up a little bit... I'll have to see what I can figure out and if I have stuff that would work.
But off to tackle the desk for me now...

Please share your chicken recipe with me. I am thinking of crockpoting today, too! Bryan has to work all day so I want an easy meal to prepare. I know what you mean about the piles of papers. We get sooo many from the school that I don't know what to do with them!!

I just take however many chicken breasts it takes to feed the family (usually about three for us) and put the frozen chicken in the crockpot. Then I take a mild salsa and italian dressing and pour equal amounts of each to just cover the top of the chicken. Then just let it cook all day. I usually make rice to eat it with so you can dish up the chicken and sauce right on top of the rice and it soaks up the sauce. I call it my tex-mex chicken.
